Alexis Loses her 1st Tooth!

5 year old Alexis lost her first tooth today! (She wouldn't let me take a picture of her smile though- but these are some cute picture from sledding the other day!)

Just minutes before midnight we were leaving a restaurant near our house... And our lost kitten Little Bear walked up!!!! It's a dream come true! Our kids are SO happy- they have been asking for him all the time!!! 2014 is going to be a great year!!!

Happy Birthday Brian!

We love you!!

One of the presents we gave Brian for his 37th birthday!  3 small prints from the Origins series by Ninjabot.  The Origins series is showing the moment that each superhero was made... I chose these three... from left, Superman, Spiderman, The Green Lantern.  It was fun to support a Kickstarter for Ninjabot and get something unique for Brian.  When they came they were almost like postcards, so I framed them myself and now he has this cool piece of unique art hanging above his computer!


  • 2 cups rice (or other) milk
  • 2 teaspoons apple cider vinegar
  • 1 1/2 cups granulated sugar
  • 2/3 cup canola oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract, chocolate extract, or more vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder, Dutch-processed or regular
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt           
  • Preheat oven to 350°F and grease pan, and/or line with baking paper.
  • Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil, vanilla extract, and other extract, if using, to the soy milk mixture and beat until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat until no large lumps remain (a few tiny lumps are OK).
  • Pour into pans, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely   
VEGAN BUTTERCREAM FROSTING INGREDIENTS (enough to frost in between layers and a bit on top (double if you want to frost the entire cake sides, etc.)
  • 1/2 cup nonhydrogenated shortening
  • 1/2 cup nonhydrogenated margarine
  • 3 1/2 cups powdered sugar, sifted if clumpy
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup plain soy milk or soy creamer
  • Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes.
  • Add the vanilla and soy milk, and beat for another 5 to 7 minutes until fluffy.  

  • Thaw a 10oz bag of frozen cherries and mix with 2 Tablespoons sugar, cooking for a few minutes
  • Separately, in a tiny bowl, mix 1 Tablespoon Cornstarch with 2 Tablespoons Pomegranate Juice
  • Add this to the cooking cherry/sugar mixture and cook a few minutes, stiring constantly, until thickened. Allow to cool. 
  • Frost between the two layers of cake, then top the cake with the vegan buttercream frosting, the cherry mixture, then chocolate shavings!

Skylar's 10th Birthday Party!

 Skylar chose a Minecraft theme for his birthday party. My dad and Kim spent hours making foamcore minecraft swords to give as party favors! I made the other decorations. The cake is supposed to look like blocks of earth and other materials like stone, wood, etc. I'm not sure I captured that! But the boys had fun and I have lots of great pictures I need to down load of them!

Alexis's Menu

4 year old Alexis made this visual menu when I asked her to write down what foods she wanted to eat this week during spring break. I expected a lot of cookies and cake and such. But she chose salad for one day, and no cookies at all! Strange. I will make cookies anyway. I had to add the words for my own interpretation.

"Kindergarten Roundup"

"Kindergarten Roundup" was this week.  I printed out the forms and filled them out ahead of time, then went to the school 30 minutes before the thing ended.  Alexis and Sofia had come with me, with Sofia constantly saying, "Oh man, I am going to eat SO much cake at the Kindergarten Roundup!" despite the fact that I told her it was not a party, and no cake would be there.  Anyway we got there and it was totally empty, just two ladies taking forms.  Needless to say, the girls were both disappointed!

Alexis Made Her Own Party Invitations!

Alexis came up to me, holding a rubber stamp with the words For, Date, Time, Place, RSVP, on it and asked me what it was. I told her we would use it to create her invitations. A while later she returned to me with a piece of paper on which she had carefully copied the words.  I was so impressed that I asked her if we could use it. She said yes, so I asked if she could draw Peter Rabbit on it, since that is the theme of the party. So she did, and then I scanned the whole thing in to my computer to add the details! Voila!

National Oatmeal Cookie Day

The weather is mocking us... here is a picture of all the kids at the beach IN IOWA last year on this exact day. It was 85 degrees. (click on the picture to see the other pictures from that day)
Today it is simply very cold....
So, it was National Oatmeal Cookie Day, so I made Vegan CHOCOLATE FUDGE Oatmeal cookies, of course...  yummy!  I used the recipe from the "Vegan Cookies Take Over Your Cookie Jar book, but I substituted Chia since I was out of Flax.  The kids loved them too! Even with my "adding walnuts and almonds" idea!

Minecraft Cake in the works...

 Planning for my 10 year old son's birthday requires making a "Minecraft Cake". If you don't know what Minecraft is, and you google that phrase for pictures, you will find a selection of not so pretty, albeit creative cakes. I simply have not decided what to do. But I will not be putting plastic grass all over the top, this much I know.
